Wazzu Tailgate Chili

This is a great and simple chili, full of flavor, and plenty of spice. Its best when refrigerated overnight and reheated before the game. One tip: season meat heavily with chili powder, cumin, salt and pepper while browning.

Wazzu Tailgate Chili Ingredients

  • 1 pound ground beef

  • 1 pound ground pork

  • 2 tablespoons olive oil

  • 1 large onion, chopped, divided

  • 1 green bell pepper, chopped

  • 1 habanero peppers, seeded and minced

  • 2 jalapeno pepper, seeded and minced

  • 3 cloves garlic, minced

  • 3 tablespoons chopped green onion

  • 3 (15 ounce) cans chili beans

  • 1 (14.5 ounce) can diced tomatoes

  • 1 (6 ounce) can tomato paste

  • 1 (8 ounce) can tomato sauce

  • 1 (12 ounce) bottle lager-style beer

  • 2 tablespoons cornmeal

  • 1 cup water

  • cup chili powder

  • 1 tablespoon ground cumin

  • 1 teaspoon garlic powder

  • teaspoon cayenne pepper

  • 1 tablespoon salt

  • 1? teaspoons ground black pepper

  • 1 cup shredded Cheddar cheese

How to Make Wazzu Tailgate Chili

  1. Cook ground beef and pork in a large skillet over medium-high heat until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.

  2. Meanwhile, heat the olive oil in a large pot over medium heat. Stir in 3/4 of the onion and all of the green pepper, habanero pepper, jalapeno pepper, and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir the drained meat into the onion mixture along with the green onion, chili beans, diced tomatoes, tomato paste, tomato sauce, beer, and water. Sprinkle with the cornmeal, then season with chili powder, cumin, garlic powder, cayenne pepper, salt, and black pepper.

  3. Bring to a simmer over medium heat, then reduce heat to medium-low. Simmer at least 2 hours, stirring occasionally. Refrigerate overnight.

  4. Reheat the chili over medium heat until it begins to simmer again. Top individual servings of chili with cheese and remaining chopped onion.

  • I like medium-hot chili while my family prefers milder. So, I added a red and yellow bell pepper, took out the Habanero and fresh Jalapenos and replace those with 4 oz. of canned jalapenos. Rather than the 3 cans of chili beans, I used 1 chili beans, 1 kidney beans, and 1 black beans. Lastly, I also doubled the tomatoe sauce. This resulted in an medium-hot, hearty, chili that when served over rice was excellent and whole family enjoyed

  • Loved this recipe. I made a few changes. I used ground turkey instead and mixed all the spices into the meat before I cooked it. I then added the onions and veggies and liquid and then simmered for two hours. I left out the habanero because my hubby thinks they are too hot but the taste was still incredible. Even my son said this is the best chili. He loves chili. I will make this from now on.

  • This was an AWESOME chili recipe. I had to make a few adjustment due to lack of ingredients and personal taste. I omitted the green bell pepper (just not in to them). I also omitted the habanero pepper because I couldnt find any at the local grocery store and insteadused 3 jalapeno peppers. For the beans I used one can of chili beans in hot sauce and two cans of chili beans in medium sauce. I topped the chili with cheddar cheese, chopped red onions, and avocado. My boyfriend must have told me he loved this chili more than 20 times this weekend. It was spicy enough to tingle the taste buds and leave a little burn, but not melt your taste buds hot. Perfect.   • You know, I dont really like chili. Ive always had to make it, however, because Hubs and my kids liked it. In fact my grown son, a fine cook in his own right, still says I make the best chili (go figure, I dont like chili and I never taste when I cook). That said, this is some of the best chili I dont like that Ive ever eaten Ok, I changed it up, but I only did so in a big way with the heat factor, cutting back drastically on all things hot because of Hubs sensitive innards but the truth is I dont enjoy food that makes my throat and lips burn either. So that meant no cayenne or habanero, and just a teensy bit of jalapeno. I guess it was essentially sissy chili but we loved it. While I cut back on the heat I increased the beer I made half a recipe, which meant I only needed half a beer. I dont like beer so I wasnt about to drink it but I didnt want it to go to waste either, so it all went in the pot I used all beef, no pork, and adjusted the tomatoes, sauce, paste and water to get the consistency I wanted. I also threw in a can of kidney beans. Except for the beer and the cornmeal, this isnt vastly different from how I make my chili, but then I dont simmer at least two hours and refrigerate overnight before I serve it. I cant put my finger on what it is exactly, but this chili really comes together like no other not too hot, tomato-y or chili powder-y, just a perfect chili with lots of body and character. (COULD it be the beer?)

  • Even though I am a Huskie fan...this chili is great I made it for a Superbowl Party we had and everyone raved about it, coming back for seconds and thirds. It was time consuming to chop the fresh ingredients, but it was worth it. I prepared the night before and then put it in the crock pot the morning of the game...it was perfect Changes..I didnt use a green pepper and I used 2 cans of chili beans and 1 can kidney beans instead.   • This chili is spectacular I made it for the 2010 Apple Cup. Even though it is fairly labor intensive, the reward is well worth it. We ate it the day of, and it was still good, but it tastes much better the next day, as it is a lot thicker & heartier. My Dad, who is an excellent cook, even admitted to liking this & saying how good it was This is definitely a keeper.

  • This is our new family favorite chili recipe Ive made it a couple of times and thought the beer taste would be too strong for the kids, but it was fine and they loved it I used red and green peppers instead and went a little easy on the chili powder and it turned out great.

  • We like a lot of meat, so I added in an extra pound of ground beef. I used red pepper instead of green and because Im scared of handling real habanero peppers, I eliminated it and used one can of mild green chilies. I know its not the same, but its really all I had. I also used all black beans because thats all I had on hand. Because I didnt want it to be too spicy for my kids, I used california chile pepper, which has all the flavor of chili powder without too much heat. (You can find the california chile powder hanging from a j-hook in your "ethnic" section of your grocery store and it costs less than a dollar.) I did not add much more than a pinch of salt. I used all organic ingredients where I could. I threw everything in the crockpot and mixed it and let it sit overnight, then this morning, Ive been letting it cook away. Ive had a small bowl for lunch without sour cream or cheese and its tasty, but I think it needs a bit more spices. I really wish Id not added the cup of water as I think it thinned out the chili a little too much and watered down some of the flavor. If I make this again, I might add beef broth instead. Its a decent chili that adapts well for the crockpot. I think that the longer it sits, the better it gets which is pretty much true for most any chili. I really like the combination of the pork and the beef in chili. I think thats just a winning combo. And dosent beer go with just about anything? ;)

  • This recipe is incredible. I served it for my group of women and they went crazy over it. I made it the night before and then reheated in my crockpots... I made 2 batches. I used jalapenos without the seeds and no habanero so I could have heat but not HOT chili. It was so good. It was even better the next day Definately a winner and Ill be making it again soon.

  • Mmmm, great chili I made it exactly as stated. Perfect amount of heat I did feel that something was missing... some layer of flavor that I cant put my finger on. But this was really good nonetheless

  • As a Washingtonian, I feel I have the authority to pronounce the "Wazzu (WSU) Tailgate Chili" both authentic and delicious I wore gloves when working with the Habanero and used my handy chopping mechanism for finely dicing all the onions, peppers and garlic. The fewer veggies seen in chili, the better. If you like more meat, add an extra pound of hamburger but dont even think about omitting the ground pork Next time Ill double this and freeze half.

  • I was only cooking for three so I used just the lb. of beef, no pork. I used two jalapenos, but keep the seeds for heat, no habaneros. Only used two cans of beans (light red kidney). Didnt have cornmeal, was fine without it. I also chopped two stalks of celery. Used Yuengling beer and added a tsp. cocoa. Simmering chili for a couple hours and then waiting till the next day is hard to do, but well worth the great taste.

  • Very good and easy even though there are mulitple ingredients. Ive made many times and eveyone always enjoyed it. The only changes I made was to add a small can of diced green chilies in place of the habanero and jalapeno peppers and I only used one can of beans. This has become our staple Saturday night dinner.

  • This is really GREAT chili, but be warned, it is hot. I didnt use beer, instead substituted 1 can beef broth, otherwise I followed the recipe excactly. Didnt refrigerate overnight - we ate it the same afternoon (after about 4 hours in a 200 degree oven). Cant wait to taste the leftovers tomorrow.

  • The meat to veggie ratio is not what I love, but the spice mix was excellent. The second time I made the recipe, I added a diced pablano, used 4 garlic cloves and added an extra can of tomatoes and an extra can of beans. I like it hot, so I used an extra habenero too Be sure to let it simmer to let the flavors blend This was an excellent base recipe to tweak to your liking.

  • This is a very good recipe for chili but I added about a cup of beef broth which I like in my chili.

  • This was ok. Hubby & I agreed that the pork just throws the flavor a little off. Pretty spicy the first day(too much so for me) but it did mellow a bit by the 2nd day. Not a thick chili-pretty soupy after it simmers a couple of hours.

  • I make this chili in the crock pot. I sautee onions and garlic in a pan then throw it in with the rest of the ingredients. Once the onions are in, I use the same pan to brown the meat. Then I just toss the meat in the crock pot with everything else and leave it on low or high. It doesnt matter. I can tell when it is done. The longer it is cooked, the better. Just dont leave it on high for over 8 hours without checking it. It might be fine if you did leave it that long but I have never tried it. This is the only chili I make. It was the first recipe I have tried out. I dont want to make another. I actually joined allrecipes just so I could review and rate this Chili even though it already has 5 stars. We eat it straight with some sour cream, onion and cheese on top until we get sick of it. The next couple of days we make noodles for chili mac. It is great with or without noodles. Noodles may be a good idea for those reviewers I have read commenting that this recipe was too spicy. Lots of noodles and sour cream can help a chili thats a little too spicy. I use red kidney beans and black beans in addition to the chili beans, and I often cant find a habanero pepper so I use three jalapeno peppers. Otherwise I keep it exactly. Fantastic, wonderful, my go-to chili recipe. =0)

  • Great chili, one of the best Ive had. I like mine a little on the sweet side, so I added a little molasses.

  • Outstanding and my entire family loved it. I cut back on the peppers. I only used two jalapeos and it still had a small kick. I mixed up all the ingredients and then put it in the crockpot for about 6 hours. It was woven better the next day.

  • I won first place last night amongst a large pool of contestants- is there anything more that needs to be said? Excellent, people stripped nine quarts of this while leaving others half to almost full- and the reason why is the medley of tastes. I was highly reluctant to put the peppers listed in, because I was afraid it would be too hot for those who didnt like fire in their food; just the opposite. I taste-tested it on a hot chili aficionado and one who was adverse to spicy food. They both loved it, quoting the underlying flavors that were so fantastic. It has a tiny bite but not enough to make anyone uncomfortable, even children. Pepper it up more if you want but, as the prize tag said, this is the "most exquisite" chili available

  • This recipe is FANTASTIC In Taste without the beans as well. I used course chili meat and ground sirloin. This chili to be used on tamales and other mexican dishes during the Christmas holiday. Real simple prepping. The key is the maranade of all the ingredients and seasonings cooked and then the overnight processed. Foods always taste BETTER the next day because seasonings have time to marinade and blend.Enjoy

But I added sliced and browned brats and used Leinenkugels Classic Amber (Chippewa Falls, WI) instead of any old "lager-style" brew to jazz it up. Now it also reflects my families Wisconsin roots. So our version is called Bronco Tailgate Chili. Go Broncos (and Packers)

  • This was the first chili Ive ever made and everyone really liked it. I browned the meet and cooked the onions and peppers in a pan first but then I cooked it all in a slow cooker, came out awesome. I cooked it on low for about 8 hours.

  • Good recipe in general but....a TABLESPOON of salt? I read this, thought it must be a mistake, so put in a half tablespoon. That was still too much. With all the added salt in the beans and canned tomato products, I think a teaspoon would have been closer to the right amount.

  • Made this Chili for annual Halloween party. Not one complaint for guests. Only thing I changed was not using habenero peppers and used pre-cut jalapeno in the can. Chili had just enough heat.

  • Very good and very easy to make. The local grocery store didnt have habaneros, so I used 3 jalapenos. I also substituted hot italian sausgae for the pork. Also, ginger ale insted of beer. It was spicy but not too spicy. I won the best overall chili at my local church ward (out of about 15 chilis). This is definitely a keeper.

  • Excellent chili. My main reason for commenting though is I noticed several reviewers mentioned the jalapeno and habanero seeds as adding to the heat. That is not true, the seeds in peppers have nothing to do with the heat. Do some research on your own if you wish. I just wanted to clear up that misconception.

  • Wow Fabulous chili We all love chili when its cold outside ... And this recipe was a hit with the entire family. I have made it numerous times now. It is also very forgiving so if you dont have (or like) something that is called for, just substitute something you do like I am whipping up a batch right now. I ended up having to use Serrano peppers for the habanero (because I live on a small island in Alaska), and I did trade one of the cans of chili beans for kidney beans, but I followed it exactly otherwise.   • This is a very delicious recipe and Im looking forward to making it again this weekend What I like is that it has lots of good flavor along with the spicy aspect. We prefer chili with no beans so I added another can of tomatoes, to make it more interesting and I doubled the peppers as we like it spicy. Im not one to measure too much but I think I followed it pretty closely....it was delicious It also froze well....it was a bit thick after being frozen so I added a small amount of V8 and a bit more jalapeno and it was just awesome.   • I made this chili for a superbowl party, and it turned out great I will be using this recipe again and again. Some changes I made: 1) Omitted habanero pepper, and only used one jalapeno, but added a little extra chili powder (I didnt want it to be too spicy for kids, or people who are sensitive to peppers)2) Instead of using 3 cans of chili beans with the sauce, I used 2 cans of kidney beans and 1 can of pinto beans, drained and rinsed, and added an extra 3/4 cup of water (I wanted to keep the sodium down, and I like kidney beans in my chili)3) I used an Amber Ale for the beer4) I used the leanest ground beef and pork I could find (at least 90% lean) but I did not drain before adding to the pot.Thanks for the recipe

  • This is my new go-to chili recipe It is fantastic with great layers of flavor Only changes I made were: didnt have any fresh or jarred habanero peppers, so I used about double the jalapenos. Next time, I will make sure I have fresh habaneros on hand because we do like it spicy We ate our fill of chili the first night... there was a little leftover, so a few nights later I made... CHILI DOGS YUM Also, since there are just two of us now, I cut the recipe in half (hubby is a BIG eater) but next time, I may make the full batch and see how it freezes.   • This is a good chili recipe It looks like alot of work, but really it isnt. I used 3 fresh garlic cloves instead of powder. Years ago at a chili cook off people told me cinnamon is a secret ingredient. I put a small dash in and it really brings out the tomato and spice. Ive made this recipe several times & have never been disappointed. It works in the crockpot too. Just cook up the meat with the onion & garlic. Throw everything in the pot, cook on low 6 hours. I like to make Jiffy cornbread with buttermilk to go along. The chili is good leftover made into frito pie or burritos.

  • Spectacular. I consider myself an amateur chili connoisseur as I have made many chilis and am quite particular about not only flavor, but texture as well. This chili nails both I cooked it in a crock pot for 24+ hours though, so that the meat really soaked up the flavors and spices. This will be my signature chili for now; until I find a better one...

  • Great chili. The only change I made was using ground venison instead of the pork. I dont like spicy foods, but this really isnt. A bit of bite to it, but no lasting burn. I have made it twice now, and will be making it again soon.

  • I give it 4 stars because it has potential, but it needed more salt and next time I would definitely skip the green bell. The flavor really clashed for me and my hubby. Another type of bell pepper would work better. It was ok, but I like the flatlander chili better.

  • Delicious Chili without a seasoning packet. Exactly what I was looking for. I altered the recipe by only using one can of beans, one Jalapeno, and 1 tbs of chili powder. I also ADDED about 2 tbs of liquid smoke. I think the liquid smoke made it very unique and would definitely recommend it Thanks for the delicious Chili

  • This chili was excellent I was concerned about the spiciness of it as well, so I skipped the habenero and jalapenos and it turned out just right for me.   • This is very good chili. I was worried about the spiciness of the chili so I subbed a Serano pepper for the Habanero. It made a very mild chili that even me and my daughter could eat. I will make this again, next time Im going to be brave and try it with a Habanero

  • Ive made this recipe multiple times. This is an incredible recipe. I made it without the beer and habaneros, and just added more jalapenossix in total. My chili beans were red kidney beans, mexican chili beans, and garbanzo beans. I used Del Monte Diced Tomatoes, Chili Style. I added 2 cups of water instead of 1. I think that the secret of this recipe is the amount of chili powder and cumin. The cumin adds that special flavor that makes you keep reaching for the ladle to have another bowl, or three. Its got just enough heat to please the spicy fans, and if you want to cut the heat, just put a dollop of sour cream in your bowl. My friend used this recipe in a chili cook-off, and placed second. If you like a hearty, meaty chili, you cannot go wrong. Simply outstanding, and so easy to make. Next time I make it, I will definitely use a pale ale beer instead of 1 cup of water. Five solid stars.

Gin Slush

Excellent for parties of all kinds (cookouts, bridal showers, etc.) Can also be made with vodka.

Gin Slush Ingredients

  • 9 cups water

  • 2 cups white sugar

  • 1 (12 fluid ounce) can frozen orange juice concentrate

  • 1 (12 fluid ounce) can frozen lemonade concentrate

  • 2 cups gin

How to Make Gin Slush

  1. In a saucepan, combine water and sugar. Bring to a boil and let boil for 15 minutes. Remove from heat and allow to cool.

  2. Stir in the orange juice concentrate, lemonade concentrate and gin. Pour into a plastic container and freeze overnight.

  3. To serve, scoop 1/2 cup slush into a glass and top with lemon-lime soda.

  • This recipe is great. Easy to make too. Every time my brother visits he asks for these drinks.

  • The reason why I gave this recipe three stars is because its missing a few key ingredients. My mom has a recipe similar to this, but with variation. She used to make it for us as kids for christmas only, since it was mixed with lemon-lime soda, we didnt get a whole lot of alchohol. The ingredients that are missing include tea(steeped from about 5 tea bags), and crushed pineapple. There was also not as much water in her recipe as this one, but it was made up for with a whole bottle of lemon gin. I think this made it easier to scoop out. I do believe that the water was at least cut in half approximately, as the rest of the liquid was replaced with the crushed pineapple and juice as well as the concentrated juices and gin. Other wise a good recipe.

Reduced Fat Potato Soup

A thick hearty soup thats truly low fat, and packed with flavor. Quick and easy to make, this is a very satisfying meal. You wont believe its not fattening

Reduced Fat Potato Soup Ingredients

  • 1 (16 ounce) package frozen loose-pack hash brown potatoes with onion and peppers

  • 2 (10.5 ounce) cans fat-free chicken broth

  • 1 (2.5 ounce) package fat free country-style gravy mix

  • cup water

  • cup chopped green onion for topping

  • 1 cup shredded reduced-fat Cheddar cheese

How to Make Reduced Fat Potato Soup

  1. In a stockpot or Dutch oven, combine the hash browns and chicken broth. Bring to a boil, then turn heat to medium-low, and simmer for about 10 minutes.

  2. In a separate bowl, stir together the gravy mix and water. Stir the gravy mixture into the potatoes, and allow to simmer until thickened. Remove from heat and let stand for a few minutes before serving.

  3. Serve hot topped with chopped green onions and grated cheese.

  • ***** + more. I followed the recipe exactly the first time. Very good. Thick soup. Want a thinner soup; add milk. If you dont have time and want a very fast potato soup, this is the recipe. Have more time and want a better tasting soup, use fresh potatoes. The second time I used fresh cubed potatoes, sliced baby carrots, one stalk celery and a little parsley. Excellent. This soup would be very good served in a bread bowl. It is a very good tasting basic recipe that you can make your own. The secret ingredient is the country gravy mix. If you dont like onion and red pepper for the original recipe, use hash browns without the onion and pepper for the fast version. Dont like carrots or celery for the fresh potato version, dont add. You could also add ham or cooked crumbled bacon at the end and warm through. I have been looking for a good potato soup without cheese for quite some time. I finally found it. If you want, you could add cheese to this soup also and it would be very good. Like I said, this is a very good basic soup that you can tweak to your own liking. Thank you Stephanie.

  • Holy cow, Stephanie. You outdid yourself on this one. I can hardly believe that so few ingredients are capable of turning out a soup with the rich and creamy taste that this soup has. Its a piece of cake to make and so amazingly good. It really tastes as if a master chef had prepared it for an upscale restaurant. I only have one caveat to share. I could not find the fat-free country style gravy mix. If anybody knows where this can be found or even what brand to look for, I would appreciate the help. I went to two different stores and still couldnt find the fat free stuff. So, I settled on Williams Brand Country Style Gravy Mix. For those of you that are nutritionally conscious, there are 15 fat calories per serving and 40 calories per serving in the package I used (37% of the gravy mix calories are fat calories). Though Im not a dietician, with the no-fat potatoes and nearly fat-free chicken broth reducing the impact of the gravy mixs contribution to overall fat in the recipe, I suspect this is still an acceptable low-fat choice. Though I suppose you probably shouldnt have 2 1/2 large bowls like I just did. I couldnt help myself. Honest.

  • This was great Very filling I didnt have any of the frozen hash browns, so I just used fresh potatoes, bell pepper, and onion, measuring out the 16 ounces total. It added a little time for chopping, but it worked out great. I did add a little parsley and some pepper and used fat free cheddar and chives since thats what I had. I will make it again soon

  • I couldnt find fat free gravy like other reviewers, so I ended up using McCormicks Original Country Gravy. WIth that change, it made the calories per serving around 160. However, I really dont think this recipe makes 6 servings, unless youre serving a few tablespoons of soup to each person. This makes more like 4 small servings. I also couldnt find a 16oz bag of hash browns, so I used a little more than a half bag of Ore-Ida OBrien potatoes which comes in a 28oz bag. Given all that, this is a great recipe for how easy and quick it is to make Very thick and creamy, perfect for a cool fall day. I didnt have to add any additional spices, but this of course, will depend on the brand of gravy you use.

  • I made this twice and it was delicious You could not tell at all that it was low fat and it was so quick and easy to make My daughter and husband both loved it too.   • I used Campbells reduced sodium canned chicken broth and used 4 cans. I simmered one chopped onion and 3 garlice cloves in 2 cans of broth for 10 minutes. Then added one package button mushrooms sliced and simmered 5 minutes. I then added potatoes and boiled 10 minutes. I added 1/2 gravy packet and 1/4 cup water plus 1/4 dried french onion soup mix. The gravy taste was too strong for me but the french onion made it perfect. Grate fresh swiss cheese on top and its YUM. Hardly any calories or fat.

  • Rated recipe as is. This was very good and as others said, it can be customized to what you want. I got 4 main dish servings out of it and added extra milk, since it is pretty thick. I also added more onion, celery and 1 chicken bouillon cube. You could easily use plain cubed frozen or fresh potatoes & add your choice of veggies. Curried Zucchini Soup

Delicious soup with simple ingredients. Easy to make.

Curried Zucchini Soup Ingredients

  • 2 tablespoons extra virgin olive oil

  • 1 large onion, halved and thinly sliced

  • 1 tablespoon curry powder

  • sea salt to taste

  • 4 small zucchini, halved lengthwise and cut into 1 inch slices

  • 1 quart chicken stock

How to Make Curried Zucchini Soup

  1. Heat the oil in a large pot. Stir in the onion, and season with curry powder and salt. Cook and stir until onion is tender. Stir in zucchini, and cook until tender. Pour in the chicken stock. Bring to a boil. Cover, reduce heat to low, and simmer 20 minutes.

  2. Remove soup from heat. Use a hand blender, or transfer in batches to a blender, and blend until almost smooth.

Curried Zucchini Soup Reviews

  • This recipe is great as is, but I did make a few changes that made it even better. When I was frying the onions, I added hot peppers and cayenne pepper to give it some kick. After the soup was fully blended and cooked,I also added in pieces of cooked potato. The potato adds some hardiness to the soup, and makes it much more filling---while maintaining the great curry and zucchini flavor.

  • I absolutely loved this recipe. It tastes fantastic, and its easy and quick to make. Just a note for all those out there who are not veteran soup makers, be careful when you go to blend it in a blender, let the soup cool for a bit, the steam plus the blending of the soup when it is still hot will blow the lid off the blender... I discovered this the hard way.

  • For a creamier version try adding fat-free sour cream after blending. Or blended silken tofu (and vegetable stock of course) for a protien rich vegan version.

  • I had some zucchinis that were on their way out and I needed to use them quickly. I made a few tweaks to this recipe and it was amazing (Im sure it wouldve been without changes too though). I didnt have chicken stock so I used 2tbsp of chicken bouillon powder and instead of water I used a can of coconut milk. I also doubled the curry powder and added 4 flags cloves of garlic that I cooked down withthe onion for extra flavor. The coconut milk made it creamy and balanced out the curry perfectly so it had a nice heat but wasnt overwhelming. This can be eaten hot or cold and toasted nuts on top give it an added bonus.

  • This was so easy but I cut the broth in half and as it was a little bitter I added 1 tsp of brown sugar, 1 tbsp of tomato sauce and a sprinkling of chili powder. Yummy.

  • 1-23-2016 You might not think that a simple combination of zucchini and chicken broth would amount to more than a yawn. But take those two simple ingredients, add a little onion and curry powder... and youd probably still anticipate a yawn. Not so This was incredible. Hubs and I had this as part of a simple dinner, but I could also see this as a starter soup for a more elegant dinner. Its vibrant green color makes for a stunning presentation, and the curry lends a much bolder flavor than youd expect from a simple zucchini soup, which on its own does not have much flavor. Curry (which is a blend of spices) varies greatly, so its important you find and use one you like and that is the best your budget allows.

  • Delicious soup and very easy to make. I used one big zucchini rather than 4 small ones and found the skin hard and chewy once I whipped up the soup. If you are using a big zucchini be sure to peel it. I love this soup and will certainly make it again.

  • If you need to thicken, use instant mashed potato flakes. Its the Zucchini skin that makes it bitter. If you dont like the bitter, peel the zucchini first.

Also, instead of a quart of chicken stock, I substituted 4 cups of water with 2 vegetable bouillon cubes (you may want to reduce the bouillon amount a bit if you prefer things a little less salty).   • My first time ever trying curried zucchini soup and boy did everyone enjoyed it. I took advice from others and included red crushed pepper and cayenne pepper to the onion while it was frying. I also included green bell peppers. I omitted the broth and used plain water instead and added more seasoning such as adobe and garlic. I noticed for my preference it wasnt think enough so I added a large zucchini, uncooked in the blender mixed with the cook ones. It thickened it instantly. I diced up some potatoes after I blended everything and placed it back in a pot and included the uncooked potatoes and allowed for another 30 minutes on the stove cooking. Potatoes were nicely cooked. Sprinkled some parmesan cheese on top for serving and it was Delish

  • This is FANTASTIC I added 1.5 tsp of garam masala, garlic pepper, 1 tbs ginger garlic paste, 3/4 c plain greek yogurt and about a cup or so of corn. sprinkle with cilantro and you have an amazing WW friendly dish

  • I really liked this recipe, although I did add a few things. I added a few garlic cloves crushed because they go so well with onions and curry. I also added six or seven garden fresh tomatoes because they are as abundant in my garden as the zucchini. Before I pureed the soup I drained a little of the liquid off because I like a thicker soup. It turned out perfect and delicious. I considered putting sour cream in it for a creamier soup, but it doesnt need it.

  • I needed a way to use up some zucchinis and this certainly worked I decided to use 1/2 stock and 1/2 milk to add to the creaminess. I also was looking for a soup that would allow me to add some seaweed (just experimenting). It was a nice addition and I would definitely do it again.

  • I used this recipe as a guideline. Ive made it three times, and its great. I use 2 zucchinis, added garlic and two diced potatoes. I use veggie stock cubes if I have them in the freezer, water if I dont. The potatoes makes it thick and creamy.

  • I used summer squash instead of zucchini. Absolutely delicious I grow a garden and always have a lot of squash. This was a great way to use a lot of it at once. Seriously.....the best soup Ive had in a long time.

  • The idea for this soup is definitely worthy of five stars...but..the cook forgot two very essential ingredients...a few cloves of garlic and a couple torn dried red chilies to be added to the onion and curry powder while sauteing. This makes the soup absolutely delicious

  • I sauted potatoes and some more zucchini and added it to the blended soup. I enjoyed it, but it definitely needs the chunks added after the blending. Could use some garlic. Thanks for sharing this recipe**UPDATE** 5/23/10 This is so delicious I doubled it, and added an extra tablespoon of curry powder with a smattering of brown sugar. I grilled some bratwurst and cut it up in the soup. So good the second time around Thanks for sharing.

  • Using yellow summer squash plus extra curry spice gave the soup a wonderful sunny yellow color With sour cream swirled into the soup and a garnish of crushed seasoned croutons, it was very filling too. A tip Ive found helpful: puree the squash BEFORE adding the broth. If, like me, youre using a hand blender, this avoids splashes of hot liquid.

  • This was pretty darn tasty and healthy to boot I used cippolini onions and added more curry powder than called for and topped it off with a spoonful of fat-free yogurt. This is definitely going to be a stable around my house.

  • This was just ok for us. Tasted like watery zucchini and curry which is what is I guess but based on the reviews I was expecting something more. I was disappointed as I love zucchini and curry both but this was just not great. It was too thin; I added some cornstarch which helped a little. I also stirred in some sour cream to give it a more creamy flavor. I dont think I will make it again but for those who try it I would recommend adding a potato or something to give it more substance. Maybe some other veggies too? My husband liked it more than me but it didnt get raves from anyone.

  • I had a few zucchini leftover after making bread, so I decided to try this recipe. Its so simple yet delicious I just added some potatoes to make it a little more hearty. I blended most of it and left some of the vegetables in pieces to make it a little more chunky. Ill definitely be making this again

  • I make a version of this soup using butter and one large tablespoon of vindaloo or hot curry paste. It makes a very spicy cold soup, lovely in the summer. After sauteeing the onions in the butter, add the chopped zucchini and only enough chicken stock to cover. Cook until the zucchini is very soft. Then puree and add about 2 cups of buttermilk. This makes a creamy but low-fat summer soup. Serve chilled.

  • Wasnt too sure what to expect. Just made it. Added 4 cloves of minced garlic to the onion and a carrot. Reduced the (liquid) stock to about 650 ml. Was very tasty and creamy. Hubby who didnt seem keen when i said that was on the menu for dinner now wants me to make it again. Because i reduced the water, only 3 servings. Will be making it again soon, esp since its so healthy Thanx

  • This is a nice, light summer soup.I would make this in the winter but use 1/2 the water to bulk it up a bit.Next time: 1 tbsp oil1 onion 3 tbsp curry powder10 small yellow squash7 cups water2 tbsp bouillon

  • NOTE: We substituted veggie broth to make it vegetarian. Very good. Simple and reasonably quick. True medium spice level. With another flavor layer it would be 5 star. I may try adding coconut milk to it... Quality of curry powder is critical. UPDATE: On our second try at this recipe we added chili powder. We enjoyed the added spice complexity. We still havent tried a coconut milk variation.

  • This recipe is really great, quick and easy and it doesnt call for a bunch of ingredients to go out and buy. Im cooking it for the second time, and this time I am doing a double batch because it only lasted one meal when I last made it. I prefer adding a little bit more curry powder (table spoon or so) and a bit of hot chili pepper sauce. This recipe is great because it is a basic squash soup so you can use pumpkin, yellow squash, or a different kind of squash if you would like.I highly recommend this

  • My mother in law gave me a huge zucchini, so I used up about 1/3 of it in this recipe. To be honest, the soup looks kind of unappealing when its boiling, but once blended, it was absolutely tasty The curry gives it a slightly spicy zip which is very pleasant. I added 1 clove of garlic, and used home made chicken broth. A bit of cream just before serving gives it an even smoother taste, but it is really not necessary. Very simple, I will make this again for sure

  • It was good. I wouldnt go buy zucchini just to make this but I will make and freeze this with the extras from my garden. I agree with others who said this soup needs more substance. I thickened it with potato flakes and served with a dollup of yogurt. There is a lot that can be done with this as a starting point, but as a stand alone soup, for me, it was just okay.

  • Zucchini Soup has an amazing consistency and texture about it. It isnt grainy like potato-based soups can be. I find using a white onion is a must and I replaced the curry powder with thyme. My daughter is crazy about it. I add grated cheddar for her. This is a really nice soup. Some reviews suggest adding cream or milk but I prefer it as recommended. It freezes better this way.

  • I wasnt excited over this recipe but my family certainly liked it. As with most soups it was better the next day. I will definitely make it again. I also added cooked rice to it to stretch it because I was serving it at a family dinner.

  • I am cooking this currently and did add some hot peppers and some brown sugar. It smells very good, but the only suggestion I have is to put actual measurements with the recipe. 4 small zucchini is going to mean something different to every person. Give me a measurement to gauge things by so that as I put my own twist on things, I have a base from which to start.

  • I cant believe how good this is. I used a little extra curry from what the recipe stated. Also, to thicken the soup up, slowly add instant potato flakes when blending. You dont need a lot. I used less than 1/4 cup. Made the consistency perfect.

  • Im making this right now for the third time... its so easy and yummy I use veggie broth and add tofu when I blend. even extra firm tofu blends in great with the food processor I use. Both of my vegetarian teens LOVE this soup and one of them thinks he hates zucchini. ha thank you for this recipe

  • I like zucchini and I like curry- and I liked this soup, but it wasnt anything extraordinary. I love how healthy it is, and its a decent lunchtime meal. But it didnt wow me. Id make it again with some tweaks- maybe a bit more spice or something.

  • 4 stars because I changed it a pit. Added a pinch of cayenne as suggested and also half a yam to thicken.
